WA sourced organic grain freshly milled on a granite stone mill built by New American Stone MIlls in Vermont.
Varieties:
Eileen- Whole grain purple wheat flour. A variety developed by the WSU Bread Lab in Mount Vernon, WA and grown by Finnriver Farm in Chimacum, WA. Relatively soft. Best blended with stronger flours for hearth bread. Makes a great all purpose flour. Excellent flavor and amazing color.
Elwha River Spelt- Grown by Finnriver Farm in Chimacum, WA. I like this more and more as I bake with it. Great for pan breads or blended with stronger flours. I’ve been adding a little honey and toasted sunflower seeds. Also nice blended with Rye. Also great for pastry, pancakes etc. etc.
Methow Red- Hard Red Wheat, great strength for baking bread and excellent flavor. Grown by Bluebird Grain Farms in the Methow Valley of Eastern WA.
Finnriver Rye- We love this Rye, complex flavor, sweet, earthy, grassy. Makes a great old world rye bread, is superfood for sourdough starters, we use this in our chocolate chip cookies as well. Grown by our pals up the road at Finnriver Farm.
Einkorn- Ancient Wheat, incredibly aromatic with a natural sweetness. Very delicate and low in gluten for a bread flour. Great all purpose flour for pie dough, pancakes, cakes, cookies etc. etc. Grown by Bluebird Grain Farms in the Methow Valley of Eastern WA.
